A company founded by Pietro Sartori in Negrar in 1898, his five sons all studied and, among a doctor, a lawyer and an engineer, the figure of Regolo stood out as the one who started the winemaking adventure.

The heir, endowed with a superfine palate, like a tailor, was able to 'sew' with extreme care the wines to propose to his clientele, which grew year after year.

After the Second World War, numbers also soared. Then, in 1952, when Regolo passed away, his two sons took over the business, opening it up to the foreign market.

The 1990s marked a turning point in the management of Casa Vinicola Sartori, which saw the entry of the Sartori family into the Board of Directors of the Colognola ai Colli winery to implement an ambitious growth project in the production and distribution of wines at a worldwide level. A goal successfully achieved.

Cultivation system "Pergola Veronese"
Harvest The grapes are harvested and selected in the vineyard when slightly overripe and then left to rest on large grids for 25 days, during which numerous transformations take place. This process ensures that the grapes reach the ideal stage of partial drying.
Wine making After fermentation the wine is left to mature in large casks for 6 months which reduces the tannic content, increases the complexity, and emphasizes the natural spiciness of the grapes.
Aging After bottling the wine refines 3 months.
