San Giusto a Rentennano (name of Etruscan origin), is set high on the river Arbia in the southernmost part of Chianti Classico. Ancient Cistercian monastery (hence formerly called San Giusto alle Monache), then indomitable fortress, was marked on the border, according to a treaty of 1204, between the counties of Siena and Florence. Guelph battlements of the castle remain of the wall, the massive walls and Barbican underground cellars, still used for aging wine in barrels. Property of the Martini family of Cigala since 1914, today the brothers Anna, Lucia, Elisabetta, Francesca, Alessandro, Luca.

Harvest | Hand-picked when perfectly mature, and dried on racks in a well ventilated room for approximately 140 days. |
Wine making | After the grapes are pressed, the must is sealed in small chestnut barrels, each containing 40 to 180 litres, which are placed in lofts where they are subject to seasonal temperature change. Here the wine ferments and develops slowly over a six year period,during which time 40% evaporates, which accounts for its extraordinary concentration. |
Aging | Before bottling, the wine is filtered, drop by drop, through Holland cloth. Vin San Giusto has long ageing potential. It is bottled and held for a further 18 months, before it is released. |
