Description

The name of the Cuvée 1522 pays tribute to the year in which the Philipponnat family arrived in the village of Ay, in the heart of Champagne. Browsing through the Maison's archives, one finds traces of the family's ancestors, whose progenitor, Apvril le Philipponnat, had owned vineyards in the "Léon" village, between Ay and Dizy, as far back as 1522.

Pairings

The particularly dry character of this 'Extra-Brut' dosed cuvée makes for a beautiful combination with seafood, boiled or grilled fish. Combining it with birds such as capon makes for an interesting dry-fatty contrast, and an even bolder one is achieved with caviar or very spicy dishes such as an Indian tandoori. However, sweet-sour and sugary falvours should be avoided.

Apvril Le Philipponnat (the ‘Le’ was subsequently dropped during the French Revolution) was the earliest member of the family to settle in Champagne. Captain of a Swiss military unit from the canton of Fribourg, he joined the French military during the war between Francis I and Italy. He is known to have married Marie d’Ambonnay, through whom he owned vineyards in Mareuil and Ay. The House dates its establishment in the Champagne region from 1522. Apvril is mentioned as the owner of Ay on this date in the will of Dom Jean Royer, the last Regular Abbot of Hautvillers.

In 1696, Apvril’s descendants, who were often ‘Royal Mayors’ of Ay, registered the family coat of arms in the Armorial de France. Today, this same coat of arms adorns all the House’s bottles. ?The labels of Philipponnat, vineyard owners and wine merchants, were among the first to bear the signature of sparkling Champagnes as early as the mid-19th century.

Origin The Pinot Noir comes from the company's vineyard "Le Léon" in Ay, and the Chardonnay from Mesnil-sur-Oger.
Wine making A portion of the wines are vinified in wooden barrels without malolactic fermentation to preserve the wine’s freshness, allowing it to develop complexity. Both ample and tangy, this cuvée is eminently suitable for low dosage, extra brut, with only 4.25 g/litre, which is just one-third of the conventional dosage for a brut Champagne.
