The Champagne Au Fil Des Temps by Paul Gosset is a pure expression of the French terroir, a structured Blanc de Noirs with a dry profile. In the glass, it displays a straw yellow hue illuminated by golden reflections and crossed by a fine perlage. On the nose, it offers inviting fruity aromas that harmoniously intertwine with elegant brioche notes. On the palate, it reveals a long, balanced sip of great complexity. Best served at a temperature of 6-8°C, this Traditional Method boasts excellent ageing potential, allowing it to evolve magnificently over time.

Where it comes from

This cuvée originates from the prestigious village of Aÿ, an area historically renowned for the cultivation of Pinot Noir. The Paul Gosset family carries on a winemaking heritage whose roots date back to the sixteenth century. Today, the estate covers just a few hectares of vineyards, managed through rigorous organic and sustainable farming practices. This approach enhances the identity of the soil and yields grapes of impeccable quality, faithfully reflecting the character of the Champagne region. A deep connection with the land translates into an artisan production of utmost precision.

How it is produced

The production of this Blanc de Noirs follows the strict rules of the Traditional Method, starting with careful vinification of only Pinot Noir grapes. After the prise de mousse, the wine rests patiently on the lees for a long ageing period of 32 months, a crucial step for developing structure and aromatic breadth. The final Extra Brut dosage is kept to a minimum, defining a taut and vertical profile. Before leaving the cellar, the Champagne benefits from a further post-disgorgement rest of ten months, ensuring perfect gustatory balance.
