Description

Sancerre AOC still white, 14% ABV, 100% Sauvignon Blanc, produced by Pascal Cotat in the Loire. 0.75 L bottle, 2023 vintage. A Sancerre that embodies the elegance and minerality of Sauvignon Blanc, crafted with passion and respect for the terroir. Pascal Cotat owns a small estate in Sancerre, with a traditional and rather limited production, yet among the most important and respected in the area. Harvesting, as well as all vineyard management, is done by hand, and respect for the terroir is a way of life rather than a viticulture approach for this winery. Vinification is carried out with gentle pressing, and to enhance the terroir's expression, only indigenous yeasts are used for fermentation. The wine ages in 600-liter oak barrels, with an average age of 60 years. No filtration is performed. Intense mineral and citrus aromas reminiscent of cedar. In the mouth it expresses itself with intensity and breadth, enveloping the entire mouth in an interminable, pulpy and savoury sip.

From this winery
Pascal Cotat owns a small domaine in Sancerre, from the traditional and rather limited production but among the most important and authoritative of the area.

The main vineyards of the domaine are both located on the terroir of Chavignol, east of Sancerre and cultivated with Sauvignon Blanc, a native vine of the northeastern region of the Loire, which reaches excellence in these places.

Pascal also owns a small piece of pinot noir that he uses to produce an interesting and almost unavailable rosè. The harvest as well as the entire management of the vineyard is manual and respect for the land is a way of life rather than a style of viticulture for this winery.

The vinification is carried out with soft pressing and with the aim of enhancing the expression of the territory, only indigenous yeasts are used for fermentation. The rest takes place in 600-liter oak barrels, with an average age of 60 years. No filtrations are performed.
