The Champagne Uni Terre Extra Brut by Oudiette Filles is a Blanc de Blancs made exclusively from Chardonnay grapes. Crafted according to the strict Traditional Method, it stands out for its dry, taut and precise profile. The Extra Brut dosage enhances its gastronomic vocation, making it the ideal pairing for refined starters, shellfish and delicate fish dishes. The decision not to filter results in a clean and crisp sip, in perfect harmony with the identity of Champagne.

Where does it come from

This wine originates from vineyards located between Beaunay and Celle-les-Condés, in the heart of the Champagne region. The blend combines the Bas Vigny plot, situated at the foot of the slopes, with a second area selected by the estate for its particular quality characteristics. The soil, facing south-west, features a surface layer of clay-silt over a limestone subsoil, while Bas Vigny rests on a chalky base. This terroir, cultivated using organic farming, imparts pronounced verticality and great finesse to the Chardonnay.

How is it produced

Vinification is tailored to the characteristics of the harvest, using vats or wooden barrels. The base wine matures for ten months in oak barrels, developing structure before the secondary fermentation. This is followed by a slow ageing of thirty-six months on the lees in the cellar, an essential stage in defining the elegance of the final sip. Production follows a purity-driven approach: the absence of cold treatments and added sugar preserves the authentic territorial expression of the fruit.

From this winery
In 2014 Margot x Charlotte joined the family estate with their mother Florence. The two sisters decide together to develop the winery. In 2014, the adventure really begins, Charlotte opened the Bed and Breakfast La Poterne in Epernay. In 2015, after a few years of studies, Margot took over the 2.5 hectares estate spread over the municipalities of Beaunay in the hills of Petit Morin and Celle les Condés in Aisne. Both associated in the project, in 2016 they create the Sensations Vigneronnes a wine tourism activity and then in 2017, initiate the vinification of the first bottles. 50 ares are then dedicated to winemaking. 4 years later, the UniTerre cuvée is born, it is then the first cuvée of the domain.
