To preserve environmental balance, the land is nourished exclusively with natural fertiliser, while crop protection relies on copper and sulphur. How it is produced

Vinification begins with the first alcoholic fermentation in temperature-controlled stainless steel tanks, followed by malolactic fermentation. The identity of the blend takes shape during the assemblage, enriched by a significant proportion of reserve wines that provide volume and structural depth. The prise de mousse takes place in the bottle in strict accordance with the Traditional Method. The wine then rests on the lees for a long maturation of thirty-six months, a period that enhances its austerity and dry character. Wine making The wines are made up of 50% reserve wines. In the vineyard, a reasoned approach to agriculture is practised, with respect for the environment. In the winery, the wines undergo their first alcoholic fermentation in temperature-controlled stainless steel tanks, followed by malolactic fermentation in preparation for blending with reserve wines from the previous two vintages. The second fermentation then takes place in the bottle, where the wine rests on the lees for 36 months. Natural manure is used as fertiliser in the vineyard; only copper and sulphur are used as plant protection products.
