Description

What kind of wine it is

Sapience Oenotheque is the Premier Cru Champagne from the Marguet winery, created from a meticulous blend of Chardonnay, Pinot Meunier and Pinot Noir. Crafted according to the principles of the Traditional Method, this sparkling wine stands out for its well-defined aromatic profile. In the glass, it displays a brilliant straw yellow hue, crossed by a fine and persistent perlage. The palate is dry and assertive, typical of a zero dosage, supported by intense fruity aromas and fragrant yeast notes. Its structure is ideal for enhancing shellfish and fried fish.

Where it comes from

The grapes for this blend come from the villages of Trépail, Cumières and Bouzy, located in the renowned Champagne region. The vines sink their roots into deep chalky soils, a geological feature that imparts pronounced minerality and a sense of great solidity to the wine. In these crus, the linearity of Chardonnay combines with the incisive character of Pinot Noir and Pinot Meunier, creating a perfect balance. The estate adopts biodynamic practices, focusing on soil health to enhance the genuine purity of the terroir.

How it is produced

Production strictly follows the Traditional Method, involving careful ageing on the lees in the bottle, which amplifies the complexity of the bouquet. The decision to vinify this cuvée as a zero dosage results in a rich and structured sip, free from added sugars, to fully showcase the raw material. As a testament to a deep connection with the land, the estate cultivates the plots using horses, preserving the vitality of the soil. The result is a dry and profound wine, also excellent when paired with cheeses.

History and Curiosities

Marguet Sapience Oenotheque 2013 is a Premier Cru Champagne that embodies respect for nature. Originating from the terroirs of Trépail, Cumières and Bouzy, this classic method pas dosé is the pure expression of rigorous biodynamic agriculture. Since 2010, the Maison has worked the chalky soils with the help of horses, honouring the deep connection between the vine, man and the land. Its unspoilt essence, with a minimal sulphite content, offers a fine perlage and a rich structure, in which vibrant fruity notes blend with elegant hints of yeast.

From this winery
At the estate we have been working the soil since 2010 using horses to contribute to the well-being of the land.

The horse is a unique link with the elements that make up our land such as the mineral (chalk), the plant (vines and endemic flora) and the animal (fauna and Man).

In many civilizations, the horse is a sacred animal, non-predatory and contributing to social and spiritual balance.

Our winery is dedicated to harmony with nature by nurturing old vines with biodynamic, phytotherapeutic and aromatherapeutic practices. Discover our localities of Ambonnay and Bouzy, where we cultivate our grapes with an average age of 40 years.
