Aging Racked into specially made vitrified cement vats with cork insulation, the wine maintains a post-fermentation temperature of about 22°C for a long time. In this way, malolactic fermentation starts and ends spontaneously in a short time. To bring out all its richness and allow the various components to blend perfectly with each other and give a wine that is fully expressed, yet capable of a very long life, Barolo Riserva ages 3 years in traditional large Slavonian oak barrels, which help to make it harmonious and balanced and increase the finesse of its bouquet. It completes its ageing in the bottle for several months and can only be placed on the market about 6 years after the harvest.

The Marchesi di Barolo winery was founded in 1806 in the heart of the Langhe, following the marriage between Carlo Tancredi Falletti and the French aristocrat Juliette Colbert di Maulévrier, who understood the importance of nebbiolo grapes, the production of which gave rise to intense, decisive wines that would improve with time. Xtrawine devotes special attention to Marchesi di Barolo wines, proposing bottles that have received important awards from Bibenda and belonging to the best vintages of 2012, 2013 and 2016. At the end of the 19th century, the Marchesi di Barolo winery was acquired by Pietro Abbona, and is now run by his nephew Ernesto Abbona, who can count on a vineyard estate of 65 hectares from which come high-quality wines that add to the winery's fame. Thanks to the climatic conditions and the fertility of the land, aromatic, pure and simple grapes are cultivated, which are processed in the cellar to the best of their ability thanks to proven experience in the field. Soil composition Soils are particularly rich in clay and limestone, which appear to the eye as White Soils. These types of soils, which are very compact and impermeable, force the vines to root deep in search of water.
Cultivation system Guyot.
Wine making The freshly harvested grapes arrive at the winery intact and are quickly crushed and gently destemmed to extract only the noblest and most aromatic fractions from the skin and the outermost area of the berry. Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration on the skins lasts about 10 days, during which periodic soft pumping over is carried out so that the must can gather all the elements present and gently extract the colour. Racking takes place only when all the sugar has been transformed into alcohol.
