Legrand Latour's Champagne Yprésien Extra Brut is an organic Blanc de Noirs made from a blend of Pinot Meunier and Pinot Noir. Distinguished by its straw yellow colour, it reveals a fine perlage and an aromatic profile where red fruits blend with delicate yeast notes. On the palate, it is taut, dry and deeply mineral. It is ideal served chilled alongside raw seafood, sushi, starters and cheeses.

Where does it come from

This wine is produced in France between Vandières and Verneuil, in the heart of the Champagne region. Legrand Latour adopts a geo-oenological approach aimed at enhancing soils rich in fossils dating back to the Ypresian epoch, from which the cuvée takes its name. This particular soil composition gives the wine a pronounced sense of place and a remarkable capacity for evolution, while maintaining a rigorous, clean and highly characterful sip.

How is it produced

Production follows the principles of the Traditional Method, with ageing on the lees for twelve months, enriching its complexity and structure. The decision not to add sugars, opting for zero dosage, preserves an essential and pure flavour profile, in keeping with the Extra Brut philosophy. The result is a rare cuvée, characterised by persistent continuity on the palate and supported by a firm and elegant structure.

For four generations, we have endeavoured to cultivate the vines and to produce our champagnes with respect for tradition by applying new working techniques and modernising the House's equipment.

Having the honour of being the representative of Champagne Legrand-Latour today, it is my duty to preserve the values we hold dear. My father's passion for researching fossils in our terroir led me, through a geo-oenological approach, to express the influence of this Champagne subsoil, rich in fossils, and to highlight the mineral expression of our champagnes.
