Gianfranco Fino has rightfully entered the range of those winegrowers tied to traditions whishing to save old vineyards and keep their features alive. Harvest By hand, at the end of August. Grapes are slightly dried on the vine followed by a careful selection of the best bunches. The grapes are brought to the winery in refrigerated trucks.
Wine making Once in the winery, grapes are sorted, destemmed and softly crushed. Maceration occurs in a 70-hl stainless steel vat with a skin-must contact for two to three weeks. The marc is temperature-controlled with 2 daily délestag. The marc is pressed by using a vertical hydraulic press with a stainless steel cage.
