What kind of wine it is

Sofi Schiava Franz Haas is a still red wine produced in Trentino Alto Adige from Schiava grapes, grown in the territory of the Indicazione Geografica Tipica Vigneti delle Dolomiti. In the glass, it displays a delicate light ruby red colour, with an olfactory profile that reveals distinct aromas of cherry and cranberry, enriched by subtle hints of cocoa and bitter almond. On the palate, it is smooth and inviting to drink, characterised by a pleasant freshness and light tannins that make it ideal for convivial occasions, with vinification and ageing carried out in steel tanks.

Where it comes from

The vines grow in the Vigneti delle Dolomiti area, where Franz Haas has been dedicated to viticulture since 1880, passing down expertise through eight generations. The rows are situated at an altitude between 350 and 400 metres, enjoying optimal south-facing exposure. The Schiava plants sink their roots into gravelly soils of medium weight and are cultivated using the pergola system, a well-established agricultural practice in the area. These specific soil and climate conditions ensure the development of a clear and well-defined fruit, essential for maintaining the agile structure that distinguishes this wine.

How it is produced

The vinification process begins with careful destemming of the bunches. Next, the must undergoes alcoholic fermentation at a controlled temperature in steel tanks, a material chosen to preserve the primary aromatic integrity of the grape. A crucial stage is the malolactic fermentation, which helps to make the sip softer and more harmonious. The young wine then continues its journey with five months of ageing, which stabilises the colour and fixes the delicate fruity aromas, resulting in a final product with a fragrant and pleasantly vinous character.
