Still white wine from Trentino-Alto Adige, 13.5% ABV, produced by Franz Gojer. 100% Sauvignon. 0.75 L bottle, 2023 vintage. A Sauvignon born from a passion for viticulture and a deep connection to the land. Manual harvest and transport in large crates. Gentle gravity-fed processing on natural slopes. Maceration on the skins: 6 hours. Pressing, natural sedimentation of the must for at least 48 hours at a temperature of 6°C. Slow and controlled fermentation, decanting until the arrival of spring. 10% of the grapes are fermented for 3 days with whole berries. Lightly fruity with notes of grapefruit, passion fruit, and herbs. Lively, with a bold, full-bodied flavor and a consistent minerality.
