What kind of wine it is

Trento Brut by Endrizzi is a dry sparkling wine from Trentino with great gastronomic versatility, a Metodo Classico born from a refined blend that combines Chardonnay and Pinot Noir. Visually, it presents a pale straw yellow colour, greenish highlights, and a fine, persistent perlage. The aromatic profile is crisp, with notes of green apple and fresh pear, combined with hints of bread crust and dried fruit resulting from resting on the lees. On the palate, it is savoury and lively, with a marked freshness that makes it ideal for pairing with shellfish, raw seafood, vegetarian dishes, and matured cheeses.

Where it comes from

The grapes grow on the terraces of the Cembra Valley, in the heart of the Trento area. The rows develop in a mountain environment, at an altitude between five hundred and six hundred and fifty metres. This microclimate ensures slow ripening, which is essential for preserving a lively acidity. Some of the clusters come from Pian di Castello, a plot surrounded by woods with vines cultivated using the Guyot method for over thirty years. Constant ventilation gives the wine a dry and vertical sip, characterised by a strong saline imprint.

How it is produced

The production process begins with summer thinning and continues with the manual harvest, aimed at preserving the integrity of the bunches. This is followed by soft pressing in an inert atmosphere to prevent unwanted oxidation. The first fermentation takes place at a controlled temperature in steel tanks. Subsequently, the secondary fermentation follows the rigorous principles of the Metodo Classico. The wine ages on the lees for at least twenty-four months, acquiring complexity and structure. Finally, a minimal dosage ensures a dry finish, an authentic expression of the terroir.
