Where does it come from

Originating from Negros Island in the Philippines, this rum benefits from sugar cane grown in mineral-rich volcanic soils. Maturation takes place at the foothills of Mount Kanlaon, where the equatorial climate shapes the character of the spirit. The warm, humid environment leads to significant evaporation, naturally concentrating the flavours for a rich sensory profile. The brand name pays tribute to Dionisio Magbuelas, known as Papa Isio, a leader in the Philippine struggle for independence.

How is it produced

Production starts with hand-harvested sugar cane, which is processed into molasses and fermented. The liquid undergoes traditional copper pot distillation, followed by vegetable charcoal filtration to refine its structure and ensure a clean palate. The spirit is then matured for seven years in American oak barrels, gaining depth from the highly toasted wood. In the final stages, a precise amount of natural cane sugar is added to soften the texture, resulting in a consistently smooth and enveloping profile.

Master blenders at the Bleeding Heart Company expertly shape this limited release to honour its vibrant heritage. Nestled at the volcanic foothills of Mount Kanla-on, the spirit matures for at least seven years in double-toasted American oak. Here, the warm equatorial climate drives intense evaporation, elegantly concentrating the flavours to produce an exceptionally rounded and rich amber rum.
