The Champagne Premier Cru Côte Extra Brut from Domaine Les Monts Fournois is a Blanc de Blancs that expresses the great potential of Chardonnay with precision and vitality. Produced following the rigorous principles of the Traditional Method, it appears in the glass with a bright straw-yellow colour, enlivened by a fine and persistent perlage. On the nose, it opens with crisp citrus notes that introduce a lively, savoury sip with a long and satisfying finish. Its defined structure fully enhances the aromatic profile of the grape variety.

Where it comes from

The grapes come from vineyards located in Vertus Premier Cru, in the heart of the famous Côte des Blancs. In this outstanding terroir, the vines benefit from ideal conditions that give the wine a clear sense of place. The winemaking is led by Juliette Alips, whose training in Burgundy is reflected in meticulous and respectful management of the land. Careful work and the selection of small parcels allow for a faithful interpretation, awarded 94 Vinous points by critics.

How it is produced

The production process involves long ageing on the lees, an essential step to consolidate structural complexity while maintaining the dry profile that characterises the Extra Brut dosage. This rest in the cellar gives the wine significant potential for evolution, enriching its texture without compromising its gustatory tension.

Born from the expertise of oenologist Juliette Alips, this Extra Brut Champagne is a refined Blanc de Blancs from the prestigious Premier Cru vineyards of Vertus. Under the guidance of the founder of Domaine Les Monts Fournois, supported by the wisdom of the Bérêche family, this vintage matures for over twelve years on its lees. A patient wait that forges a wine of superb elegance, awarded 94 Vinous points. Thanks to its limited production, it is an authentic oenological rarity, created to celebrate the vibrant purity of Chardonnay in every glass.

From this winery
Born in Champagne in a grower’s family, Juliette Alips rapidly found her passion. With the mentorship of her close cousins, Raphaël and Vincent Bérêche, she discovered and learned all the ins and outs of producing champagne, from farming, to vinification, tasting and blending.

Graduated from oenology school in Beaune in 2020, Juliette already has a few vintages under her belt with acclaimed producers like Louis Latour in Bourgogne, G.D. Vajra in Piedmont, and closer to home, Roederer Estate where she spent more than a year learning from this iconic maison.

Now, with the help of her two cousins, she is starting this new adventure with Domaine Les Monts Fournois. Located in the north part of the Montagne de Reims, in the sub-area called La Grande Montagne, the Premier Cru Les Monts Fournois will be the focus of the domaine. Until the first vintage of that wine releases in a couple of years, the Domaine is offering a very small selection of vintage Grand Cru Champagnes. Using the extensive and strong family grower relationships developed by her cousins, Juliette is able to source tiny quantities of superb champagne from iconic vineyards to craft these exceptional wines.

We are pleased to present this inaugural offering of 3 grands crus: a 2015 Côte Grand Cru from the Côtes des Blancs, a 2016 Côte from the Oger Grand Cru in the Côtes des Blancs and a few, highly coveted cases of 2012 Montagne Grand Cru from the Montagne de Reims area.
