Still biodynamic red from the Loire, produced by Domaine des Roches Neuves (Thierry Germain), 12.5% ABV, 100% Cabernet Franc, 2021 vintage. A wine born from the passion of Thierry Germain, who cultivates his vineyards using biodynamic methods, for a wine that best expresses the terroir. Manual harvesting in wooden crates, sorting on a table before being placed in vats. 100% destemmed. Fermentation in 60 hl truncated cone-shaped vats at a temperature between 15°C and 22°C, after a 2-5 day maceration that allows the native yeasts to begin working. Aged on the fine lees in 12 hl and 60 hl oval wooden vats. Intense ruby red, with a luminous and brilliant appearance with blue-violet and cherry hues. A complex wine that expresses all the fruit of Cabernet Franc. The attack is direct. The stewed fruit adds depth. With a pleasant acidity, aromas of eucalyptus and bergamot are evident.

reach the highest potential yields, Thierry Germain is going the other direction, using his compost only when necessary, and asking the vines to suffer to produce much, much less fruit. The end results are stunning.
Domaine des Roches Neuves has become a benchmark producer from this tiny winemaking region, harvesting
completely by hand in over 30 parcels, all of which are vinified separately. While yields of most properties average
upwards of 60 hectoliters per hectare, Roches Neuves averages just shy of 30, with some bottlings as low as 15. The
difference in flavor, color, ageability, and complexity is enormous. By farming biodynamically and using only limited
amount of natural fertilizers, Thierry is able to “manage” what are, in essence, “wild” vines which produce miniscule
amounts of fruit. One can easily see the difference in the clusters as well as the leaves. Read more
