After clarification of the must, selected yeasts are inoculated for fermentation in temperature-controlled stainless steel tanks. This is followed by racking and lowering the temperature to around 10°C to avoid malolactic fermentation. We continue with regular battonage until the best sparkling wine bases of the vintage are assembled to form the Cuvée, which is bottled in March, with the addition of the "draught syrup", corked with the crown cork and laid down in the stack for frothing. |
| Aging | The stacked bottles remain 50 months in contact with the yeasts before "remouage". Then disgorged and dosed only with the same wine. Draught: spring following the harvest. |
| Allergens | Contains sulphites |
