Description

Still red from Tuscany, IGT, 14% ABV, produced by Colombaio di Cencio. Futuro, 2020 vintage. A wine that embodies the philosophy of a winery that blends tradition and modernity, with 25 hectares of entirely organically farmed vineyards. 33% Cabernet Franc, 33% Cabernet Sauvignon, 33% Merlot. Aged for approximately 24 months in large barrels and previously used tonneaux. Enveloping, spicy, with hints of toasted wood, warm. On the palate, it is flavorful, with hints of black pepper and dried fruit (apricot), very balanced, yet very full-bodied and long.

Colombaio di Cencio was founded in 1993 by Werner Ernest Wilhelm, a German entrepreneur who was inspired by the beauty of the hills surrounding Gaiole in Chianti (Tuscany) and decided to establish a farm.

As a result, he transformed a rural cottage surrounded by woods into a winery where tradition and modernity coexist peacefully.

The vineyards are divided into three distinct areas within the municipality of Gaiole in Chianti: Cornia, Montelodoli, and Vinci.

The differences between these areas are due to the pedoclimatic characteristics of the areas as well as the type of grapes grown.

Origin Il Futuro comes from the best vineyards of the canti in Loc. Cornia and Loc. Monticello

Soil composition The vineyards in the Montelodoli locality where this wine originates are rich in clay alternating with alberese boulders and calcareous sandstone, while the Cornia vineyards are richer in stone, a characteristic that greatly restrains the vigour of the vines, enhancing the structure of the future wine.
Harvest Mid-September. carried out exclusively by hand with selection and transfer to the cellar of the grapes according to variety, destemming without crushing.
Wine making Vinification in stainless steel tanks at controlled temperature for 21 days, with submerged cap post-maceration for 2 months. Racking and pressing.
