Colombaio di Cencio Chianti Classico Gran Selezione Cornia is a still red wine that embodies the most authentic essence of Sangiovese. It displays a deep ruby hue, heralding a clear bouquet defined by notes of ripe red fruit and plum, enriched with hints of vanilla and sweet spices. On the palate, it offers an enveloping entry, supported by sweet, silky tannins that lead to a long-lasting finish. Thanks to its balance between structure and freshness, it pairs superbly with red meats and game, mature cheeses, and first courses with elaborate sauces, benefiting from about an hour of decanting.

Where it comes from

The grapes come from vineyards located in the areas of Cornia, Montelodoli, and Vinci, in the municipality of Gaiole in Chianti, the beating heart of Chianti Classico. The rows are arranged on slopes forming a natural amphitheatre with a south and south-west exposure, constantly ventilated by fresh breezes. The limestone terroir with a sandstone base is essential for containing the vigour of the vines and promoting a prolonged vegetative cycle. These soil and climate conditions allow the Sangiovese to express a dense texture and a consistent flavour progression. Strict manual selection ensures the integrity of the fruit, which is quickly brought to the cellar to preserve its aromatic quality.

How it is produced

The vinification process involves gentle destemming without crushing, followed by fermentation in temperature-controlled steel tanks. The extraction of noble substances takes place through submerged cap maceration, prolonged to ensure optimal integration of phenolic components. The wine then matures for about thirty months in used barrels, a choice aimed at enhancing the complexity and stability of the sip without overwhelming the fruity notes with excessive woodiness. The result is a wine of great harmony, distinguished by exemplary technical clarity and an excellent capacity for ageing over time.

Colombaio di Cencio was founded in 1993 by Werner Ernest Wilhelm, a German entrepreneur who was inspired by the beauty of the hills surrounding Gaiole in Chianti (Tuscany) and decided to establish a farm.

As a result, he transformed a rural cottage surrounded by woods into a winery where tradition and modernity coexist peacefully.

The vineyards are divided into three distinct areas within the municipality of Gaiole in Chianti: Cornia, Montelodoli, and Vinci.

The differences between these areas are due to the pedoclimatic characteristics of the areas as well as the type of grapes grown.
