Still red from Burgundy, 12.5% ABV, produced by Domaine Henri Naudin-Ferrand. 100% Pinot Noir, 2023 vintage. A wine born from the passion of Claire Naudin, who inherited the estate in 1994 and chose to vinify using sustainable methods, rejecting standardization in favor of traditional methods. Hand-picked, meticulously sorted. Whole-grain vinification without added SO2. Very ripe nose dominated by red fruit: blueberry, blackcurrant. Intense color. Very soft oak, coated tannins, discreet acidity.

| Wine making | Inertisation with a little dry ice. After 5 days of intracellular fermentation, the first fulling triggered malolactic fermentation. It lasts about 10 days with some cap punching down. The pressing is gentle (0.7 bar). The wine was transferred into barrels, 6% of which were new, by gravity and without aeration. |
