Description

What kind of spirit is this?

Chartreuse Jaune by Chartreuse is a French herbal liqueur crafted from approximately 130 botanicals and wine alcohol. It offers an inviting profile, opening with aromas of mocha and dark chocolate, followed by precise notes of anise and resin. On the palate, it is creamy and subtly citrusy, balanced by a delicate bitterness and a long, spicy finish. Naturally sweetened with honey and tinted with saffron, this 43% ABV liqueur is best served chilled between 12 and 16°C, making it an ideal digestif or a complex base for classic cocktails like the Bijou and the Last Word.

Geographical origin

Produced in the Rhône region of France, this spirit is crafted within the cellars of the Grande Chartreuse monastery. Its heritage traces back to a 1605 manuscript detailing a complex herbal elixir. The full recipe remains a secret, known only to two Carthusian monks who oversee the selection of every ingredient. The vast array of botanicals is primarily sourced from the French and Italian Alps. This alpine origin provides a foundation of medicinal herbs, vibrant flowers, roots, and citrus notes, resulting in a deeply layered, resinous character.

Production process

Production begins with the infusion of the botanical blend to extract aromatic compounds. This mixture is then distilled in copper pot stills fitted with herb baskets to capture delicate floral notes. The spirit is naturally sweetened with honey, while saffron provides its bright yellow hue with green-gold highlights. Finally, the liqueur matures for at least three years in large French oak casks. This extended ageing integrates the botanicals, mellows the alcohol, and ensures a long, harmonious persistence on the palate.

History and Curiosities

Crafted by Carthusian monks in Voiron based on a 1605 manuscript, Chartreuse Jaune is a captivating spirit. The entirety of its secret recipe of 130 botanicals is known to only two monks, ensuring exceptional exclusivity. Distilled in copper pot stills and delicately sweetened with honey, it achieves its vibrant colour entirely naturally through the use of saffron. After maturing for at least three years in large French oak casks, this French herbal liqueur develops a profoundly smooth, sweet profile, offering a masterful taste steeped in centuries of authentic monastic tradition.

130 herbs, flowers and spices in different dosages and formulas make it possible to make two of the oldest liqueurs in the world: the yellow and green Chartreuse. Two monks of the Carthusian order are the only holders of the secret of production, 100% concentrated near Voiron in the French Alps. All the distillery's liqueurs are aged in large casks and, in the case of the VEPs, in small casks.

Entering the cellars and the Chartreuse distillery is like going back in time: only natural raw materials, distillation and infusion processes, no preservatives or colouring agents, ageing for more than three years in wood, selection of the best ageing methods to become VEP, recipe and monastic production, the link with the land, the French Alps.

As a refined digestif, it pairs beautifully with desserts, fruit, or fine Cuban and Dominican cigars.
