Description
What kind of wine it is
Cavallotto Barbera d’Alba Superiore Vigna del Cuculo is an organic still red wine that precisely expresses the character of the Barbera grape grown in Piedmont. Part of the prestigious Barbera d’Alba denomination, this wine stands out for its compact and brilliant ruby colour. On the nose, it offers an intense aromatic profile, with clear notes of black cherries and sour cherries intertwined with hints of rose, pine needles and delicate spicy nuances. On the palate, it is fleshy and rich, supported by a lively acidity that balances the full structure and silky tannins. Its balanced taste makes it ideal for pairing with cured meats, vitello tonnato, structured first courses, red meats and grilled fish.
Where it comes from
The grapes are grown in Castiglione Falletto, in the heart of the Barolo region. The bunches come from the Vigna Cuculo, a specific plot located within Bricco Boschis, an area renowned for giving the Barbera grape remarkable intensity. The characteristics of the soil and the microclimate give the wine a solid structure and a pronounced capacity for ageing. The agronomic management aims to encourage a high aromatic concentration, while the connection with the Piedmontese territory results in marked freshness, authentically enhancing the territorial identity of the variety.
How it is produced
Vinification begins with complete destemming, followed by fermentation conducted exclusively by indigenous yeasts. During this phase, the must is worked with pump-overs and punch-downs, along with a submerged cap maceration lasting about two weeks, ensuring optimal extraction. Malolactic fermentation takes place in cement tanks during the following spring, integrating the natural acidity. Maturation continues for a period between fifteen and eighteen months in Slavonian oak barrels, an essential step to harmonise the structure before the final ageing in glass.
History and Curiosities
This prestigious organic red wine originates from the renowned Vigna Cuculo, a precious plot located within the Bricco Boschis in Castiglione Falletto. True to authentic Piedmontese tradition, fermentation occurs spontaneously thanks to native yeasts, followed by the classic submerged cap maceration. The meticulous ageing process of 15-18 months in historic Slavonian oak barrels gives this exceptional Barbera d’Alba Superiore a formidable structure, silky tannins, and an extraordinary propensity for long ageing.
