Rhum Rhum Bianco PMG by Capovilla is a Pure Single Agricole Rum crafted exclusively from fresh sugarcane juice in Marie-Galante, Guadeloupe. Produced through slow fermentation, double distillation in copper pot stills, and resting in stainless steel tanks, this spirit presents an intense and structured profile. On the palate, the rum offers a smooth, fruity, and almond-toned experience that develops through warm spices, vibrant citrus, and white flowers, culminating in a long, oily finish defined by a distinct mineral streak.

Geographical origin

This spirit originates on Marie-Galante in Guadeloupe, a Caribbean territory celebrated for its superior sugarcane. The local terroir deeply influences the rum, anchoring its profile in the vibrant qualities of fresh juice rather than molasses. This provenance is reflected in a highly fragrant spectrum, where white, red, and exotic fruits intertwine with subtle tertiary notes of hay, light tar, and dried fish. Production process

The production process begins with the slow fermentation of pure juice in temperature-controlled stainless steel vats. A meticulous double distillation follows in small copper pot stills heated via bain-marie. This batch distillation method is chosen specifically to extract maximum aromatic finesse from the raw material. The spirit then undergoes resting in stainless steel for at least one year, maintaining its transparent appearance while preserving authentic sugarcane flavours. This precise technical sequence yields a remarkably clean structure, perfectly balancing vivid fruit tones with intricate spices and floral nuances.

Rhum Rhum Blanc PMG holds the unique position of being the First Pure Single Agricole Rum. It is crafted in small quantities by Master Distiller Vittorio Gianni Capovilla, utilising handmade, discontinuous production methods and specific copper Müller stills.

Broad and airy, with a delicate expression of sugarcane and notes of white fruits (peach, pear), red fruits (raspberry, cherries in spirit) and exotic fruits (pineapple, passion fruit); tertiary hints of light tar, leather, tobacco, dried fish, hay and fresh ginger; in the empty glass, apricot kernel and star anise emerge.

On the palate it is fruity and almond-led, with notes of white and red fruit and hints of candied and jammy fruit; the mid-palate is enriched by spices (star anise, clove, cinnamon) and develops towards citrus (grapefruit, bergamot) and white flowers. Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundation for a completely different culture.

At that time in our country all had the ambition to distill "something" in the house without having the compenses to do so.

The passion for the world of distillates was born by accident in '74, the year I started to deal with machinery for oenology.

Many trips abroad, particularly Switzerland, Germany and Austria, allowed me to discover the world of distillation which, unlike what was happening in Italy, laid the foundations
