What kind of wine it is

Fiorfiore di Roccafiore is a still, dry white wine made from Grechetto grapes, a true expression of the Umbrian region. It stands out for its rich bouquet, characterised by notes of pineapple, yellow flowers, sweet spices and balsamic hints. On the palate, it is enveloping and fresh, supported by a pronounced minerality and a slightly oily texture that defines its elegant structure. The finish is long and persistent, offering nuances of white chocolate and toasted dried fruit. Its organoleptic qualities make it ideal for pairing with soft cheeses, shellfish and white meats.

Where it comes from

It originates in the Todi area, from vineyards managed by Roccafiore with a favourable east and south-east exposure. The richness of the calcareous marl soils, white clays and gypsum is fundamental in giving the wine a vibrant freshness and a distinct savoury character. The agronomic management follows the strict principles of organic and sustainable agriculture, protecting the local ecosystem to obtain a genuine vegan product with great expressive vitality.

How it is produced

The production process begins with a manual harvest carried out in the second half of September, followed by gentle pressing. After the natural settling of the musts, spontaneous fermentation with indigenous yeasts is started, beginning in steel and finishing in the maturation vessels. Ageing lasts twelve months and takes place in amphorae and large Slavonian oak barrels in contact with the fine lees; malolactic fermentation is avoided to preserve the natural acidity. The process concludes with a further six months of rest, essential for achieving perfect balance on the palate.
