Description
In Cantina Bassoli's Brut sparkling wine, part of the grapes undergoes cryomaceration and first fermentation at a controlled temperature. The sparkling wine is produced without using exogenous sugars from phenologically ripe grapes. Instead, self-produced grape must is used in re-fermentation, respecting the fruit's integrity and enhancing the terroir. As Emilia-Romagna has a particular terroir, the company believes that this production method is the path to rediscover this distinctiveness.

Our passion for wine making has been passed on from father to son. In order to protect the environment we take care of our heritage while new manufacturing techniques preserve our knowledge and traditions. We patiently await every year for the fruits of our land to obtain a wine in which our history is enclosed.
