Description

A grape variety originating in south-western France, particularly in the Bordeaux area, where, together with Cabernet, it forms the basic blend of some of the most prestigious wines of the Gironde. The first mentions of Merlot date back to the end of the 18th century and the first description by Rendre was in 1854. From France, it spread to Trentino at the end of the 19th century, where it found in certain areas the most suitable environmental conditions for its cultivation. This grape variety prefers well-ventilated low hillside areas with limestone-clay soils and a spurred cordon or Guyot training system. Merlot now ranks among the typical Trentino wines and has won new admirers for its characteristics of structure, personality and elegant evolution.

Cavit is a company deeply rooted in the region to which it belongs: Trentino. A small area in the north-east of Italy where the vine, olive tree and Mediterranean-type vegetation live side by side with spruces and larches of the Alpine flora. A land of ancient traditions and culture, where the presence of man, with his villages, castles and cultivated terraces blends in harmoniously with the majestic Alpine landscapes.

The image that best represents Cavit, a large co-operative composed of a large number of small wineries, is that of the vine that produces healthy grapes only if the roots and the other parts of the plant all perform their roles properly.

Created in 1950 to meet the needs of the winegrowers in the area to offer the very best quality and market their wines in a modern way, today Cavit represents over 4,500 winegrowers who are members of 11 cellars and 65% of the wine production in Trentino (around 5,700 ha). Cavit harvests, examines and selects its raw materials from the best produce of the cooperative member cellars, which undergoes strict controls at every stage: from refining to bottling.

Cavit today is one of the major companies in the wine business, operating successfully at national and international level.The headquarters in Ravina, where the production and logistics facilities are also located, house the Wine Cellar, Sparkling Wine Cellar and Wine Shop. Cavit also owns Maso Toresella, used for corporate entertaining, on Lake Toblino.

Origin The best exposed hills in the Vallagarina valley and around Trento
Climate The climate in these areas is sub-continental, with cold winters, plenty of snow and hot summers with a good difference between day and night temperatures. The Vallagarina benefits from the "Ora del Garda", a pleasant breeze that blows up from Lake Garda during the afternoon.
Soil composition The vineyards in the Vallagarina valley are located on fans formed by the sediment from ancient mountain streams and feature well-structured, easy draining limestone soils with a good clay content. On the hills around Trento the vineyards are sited on glacial or morainal terraces, featuring deep, easy draining soils with a high clay content.

Wine making After crushing the must is fermented with the skins for approximately 12 14 days at a temperature which does not exceed 28 °C, in stainless steel vats.
