What kind of spirit is this?

Dos Maderas Double Aged Rum by Williams & Humbert is a structured molasses spirit with a rounded profile. Displaying a bright amber hue with copper highlights, this rum offers a smooth mouthfeel and a full body. The bouquet layers sweet vanilla and tropical spices with toasted pecan, dried fruit, and a hint of smoked oak. On the palate, notes of honey and caramel unfold seamlessly, leading to a long, clean, and slightly dry finish. At 37.5% ABV, it leaves a lingering Sherry character and subtle notes of tobacco.

Where does it come from?

This spirit bridges two worlds through a unique maturation journey. The foundation is laid in the Caribbean, where molasses distillates from Guyana and Barbados begin their development in a tropical climate. The rum then travels to Jerez de la Frontera in Andalusia, a Spanish region world-renowned for its historic wine production. This transition allows the vibrant sweetness of its Caribbean origins to harmonise perfectly with the refined, slightly dry imprint bestowed by the Andalusian climate and expert cellaring techniques.

How is it produced?

The production process relies on a precise double ageing method to create complex layers of flavour. Initially, the rum rests for five years in the Caribbean in American oak casks previously used for Bourbon, acquiring a distinct softness and toasted undertones. The spirit then undergoes a second, three-year maturation phase at the Williams & Humbert cellars. Here, finishing in Palo Cortado Sherry casks imparts elegant nuances of dried fruit and a subtle smokiness, resulting in a balanced rum that pairs beautifully with mature cheeses and dark chocolate.
