Produced using the Traditional Method, it is made from a blend dominated by Pinot Noir, complemented by Chardonnay to provide freshness and elegance. The palate is rounded and well-structured, offering an excellent balance between softness and liveliness. The aromatic profile is distinguished by clear notes of white-fleshed fruits, while the enveloping taste finishes with a mineral and slightly earthy finish.
Where it comes from
The grapes come from Trigny, an outstanding terroir located in the Champagne region. Here, the vines grow on a unique sandy and clay-limestone soil, a composition that encourages the development of intense and defined aromas. The choice of Pinot Noir reflects a deep family passion born from the intuition of grandfather Robert. Chardonnay completes this cuvée, enhancing the wine's identity and ensuring a dry and consistently coherent texture on the palate.
How it is produced
Vinification strictly follows the Traditional Method and is carried out in stainless steel vats at a controlled temperature. Once malolactic fermentation is complete, the wine rests on the lees for a 36-month maturation, an essential period for developing fullness and harmony. The low dosage ensures a linear and clean style, ideal for aperitifs and perfect for excellent pairings with oysters and shellfish, as well as enhancing dishes based on fish or white meats.

Produced in the historic terroir of Trigny on sandy and clay-limestone soils, this Extra Brut Champagne is the result of careful vinification in steel. A skilful 36-month maturation gives a rounded, fresh and harmonious sip, enhanced by delicate notes of white-fleshed fruit and an elegant mineral finish, making it the perfect accompaniment for oysters and shellfish.

They weren’t on the same career path yet but Claire and Maxime had already started to lay the first stones, gradually building the same ambition and vision. "It always felt very natural working together. We balance each other out, we work differently but we share the same values: a passion for wine, creativity, good food and wine, love for the land, good hospitality and a real focus on the environment," they say in unison.
2012 was a milestone moment in their lives: their long-awaited and longed-for twin daughters were born. Naturally, that changed their lives. Claire explains: "My brother had decided to join the family winery. And I had a growing desire to work on a project with Maxime. Naturally, when Clémence and Olivia were born [and inspired the Clé d’Eole vintage to be born too], I started splitting my time between the two businesses. Until I returned full time in 2021."
Over time, Claire and Maxime worked together to progress, revolutionise, experiment, establish and understand their "fantastic playground". New vintages appeared, fuelled by new winemaking methods and changes to farming techniques. The vineyard switched to organic farming and was approved in 2021.
