Wine making | After soft pressing of the whole grapes and cold static decantation, the musts are sent for fermentation in steel at 16 degrees, with selected yeasts, for about 10 days. |
Aging | Maturation on the yeasts follows until the following spring, then the sparkling wine base is prepared for bottling and selected yeasts are added once again for frothing, according to the traditional classic method, in compliance with the Trento Doc regulations. Siris Rosé matures on the lees for 36 months, acquiring structure, elegance and complexity. |
