Description
A classic method sparkling rosé from Portugal, produced by Filipa Pato & William Wouters. Blend: 84% Baga, 16% Bical. Non-vintage, 11.5% ABV. A rosé born from Filipa Pato and William Wouters' passion for authentic, unadulterated wines that express the true nature of the vineyards. The grapes are harvested in different locations, as early as August, to maintain their fresh, fruity character. Traditional method, secondary fermentation in the bottle, unfiltered and unrefined to maximize the natural aromas and preserve the quality of the bubbles. On the nose, it is very expressive with notes of strawberries, pomegranate, and anise. Fine perlage. On the palate, it is refined, creamy, relatively smooth, and has a very evident minerality. The mid-palate is fruit-driven, and the finish is dry and refreshing.

Our philosophy is simple: create authentic wines without makeup. They express the true nature of the vineyards from which they come. We focus on indigenous grapes only. Baga, Bical, Arinto, Cercial and Maria Gomes create soulful wines from vineyard sites with soils, microclimates, and other aspects, ideal for growing our exquisite wine grapes with biodynamanic viticultural practices. In the winery, we gently handle the grapes, with minimal intervention and strict monitoring of the wine, allowing our grapes to express themselves fully.
Ultimately we create "terroir" wines by uniting knowledge, art and nature to produce "without makeup", each wine with its own character.
Filipa Pato - winegrower in Bairrada. Graduating from the University of Coimbra as a Chemical Engineer, she refined her Winemaker skills doing harvests in Bordeaux, France - Mendoza, Argentina and Margaret River, Australia, and with her father Luis Pato, the Baga rebel. Read more
