Wine making | The carefully destemmed grapes are vinified in modern stainless steel tanks from a selection of Sangiovese bunches. The maceration lasts around 25-30 days at a temperature of about 26°C. |
Aging | After alcoholic fermentation, the wine starts malolactic fermentation after which it is transferred to both French oak barriques and large barrels, where it remains for 20 months. 50% of the wine ages in French oak barriques and the rest in large barrels. It remains in the bottle for a further 6 months. |
