Description
The name Oudeis derives from the Greek language and means No One (Odysseus). It is meant to recognize the terroir of Langa as the most relevant cause of the quality of this wine. No person, even with experience, dedication and hard-work, can be considered the origin of the complexity that we all seek in a wine. Only the terroir has this distinctive trait and Enrico Serafino recognizes it in the name of its Alta Langa docg.

Founded by Serafino Enrico, an entrepreneur and landowner, the winery soon became one of the most important in Piedmont and among the first to spread the region's classic wines throughout Italy and abroad. In addition to the classic Piedmontese wines of the area, first and foremost Roero, Arneis and Barbera, the company produces great Barolo and Barbaresco from grapes from the nearby Langhe, noble and elegant wines in which the Nebbiolo grape variety expresses its characteristics at its best. But Enrico Serafino's pride and joy is the selection signed 'Cantina Maestra', in which the red wines Pasiunà and Parduné stand out, the highest expression of excellence of the Roero territory, and the Metodo Classico Alta Langa DOC sparkling wines. Climate | The altitude of the vineyards has an average above 400 meters in the authorized areas of the Alta Langa docg. |
Harvest | The grapes are selected on the sorting table and the whole clusters are chilled before undergoing soft pressing in an inert environment. |
Wine making | Fermentation is exclusively in temperature-controlled steel tanks. The wines obtained from this process remain in contact with their own yeasts and are subjected to periodic bâtonnage until the tirage and second fermentation. |
Aging | This process takes place in the historic underground cellars in the absence of light and at controlled temperatures for the time required by the vintage with an average of 42 months. The dégorgement à la glace ends with the dosage of the Liqueur d’expedition. For this Brut that is 6-7 gr/L of residual sugar. In the Liqueur d’expedition to preserve the terroir-wine link, no distilled wines (such as Cognac or Brandy) are ever used at Enrico Serafino. |
