What kind of wine it is

Cesarini Sartori Rossobastardo is an intense still red wine, an expression of the Umbrian region. It is created from a blend of Sangiovese, Merlot, Cabernet Sauvignon, Cabernet Franc and Sagrantino. With a ruby red colour and violet highlights, it reveals aromas of blackberry, wild berry jam and black pepper, combined with candied orange peel and vegetal notes. On the palate, it offers great softness, balanced by fresh acidity and a distinct savouriness typical of the region. The persistent finish is supported by well-integrated tannins, remaining consistent with the aromas detected on the nose.

Where it comes from

This wine faithfully reflects the Umbrian territory cared for by the Cesarini Sartori winery. The vineyards, cultivated with environmentally conscious agricultural practices, are trained using the spur cordon system. The characteristics of the clay and sandy soils, marked by formations of lacustrine origin, impart a pronounced savoury note and balanced structure to the grapes. The inspiration for this label comes from the classic reds of the Montefalco area, precisely interpreting the different varieties grown in the unique ecosystem of Bastardo.

How it is produced

Production begins with a rigorous manual harvest and selection on vibrating tables. A crucial step is the partial drying of the Sagrantino grapes, which helps to concentrate the sugars and soften the natural astringency. This is followed by a pre-fermentation cryomaceration with brief skin contact and subsequent fermentation at a controlled temperature. After racking, the wine undergoes malolactic fermentation and spends three years maturing, divided between stainless steel containers and wooden barrels. This meticulous technical process ensures a powerful and harmonious drinking experience.

Rossobastardo originates in Umbria at the Cesarini Sartori winery, founded in 2002 in Bastardo with 30 hectares of vineyards. This label reinterprets the tradition of Montefalco Rosso in a contemporary way, skilfully combining technological innovation with strict agricultural sustainability aimed at reducing the use of chemical substances. Its exceptional qualities are evidenced by prestigious awards, including 98 points from Luca Maroni, the gold medal at The WineHunter Award, and the title of Umbrian Winery of the Year awarded at Vinitaly 2022.

it was 2001, when our parents and our uncle decided to realize their dream: give everything up to dedicate themselves to country life and wine making. Thanks to their experience on the energy sector, they designed one of the most technologically advanced wineries in Europe and decided to build it in Bastardo, our hometown.

Their choice was not random: already in 1312 the urban land register certified the millennial viticultural vocation of the territory , accross the "road" (Signæ) of the ancient Flaminia, where – it is said – there was a host which served a "sweet an flavoured" wine to people travelling from Rome to North Europe.

The winery is surrounded by 30 hectares of vineyards – cultivated with Sagrantino, Sangiovese, Merlot and Cabernet vines – and by several medieval castles, still populated, which draw a unique landscape scenario.

If we were to tell Signæ with just three words we would choose technology, genius and sustainability. Thanks to technology we are able to minimize the use of chemicals both in the vineyards and in the cellar: the result are high quality natural wines, with a minimum quantity of sulphites which do not bother the head or the stomach. Alongside technology, it remains an important manual work: the harvest is manual, as the processing of the soil around the vines and the selection on vibrating tables, first of the bunches and then the berries.

Available in the 750 ml format for vintages from 2021 to 2023, Cesarini Sartori Rossobastardo is a still dry red wine of great harmony. The skilful blend of Sangiovese, Merlot, Cabernet Sauvignon and partially dried Sagrantino creates an Umbria IGT with 13.5% ABV of extraordinary smoothness, ideal at 15-18 °C paired with red meats and cheeses.
