Aging After two gentle rackings, half of this Pinot Noir is aged over some months in large barrels of French oak, and the remainder is aged in small casks of French oak (barriques) which are 2 - 3 years old. In 1928, Peter Zemmer, the great uncle of the present winemaker of the same name, established the winery. Vineyards and wineries in the best locations around Cortina s.s.d.v. in the lowlands of Alto Adige have been part of the winery since then.

Helmut Zemmer, the founder’s nephew, has always been working in the business and after the early death of his uncle in 1969, he took over the winery, which he has turned into one of the leading companies in the region

Now his son Peter continues the legacy in the interest of his family.

Wine making The stems are immediately removed and the grapes are fermented at a constant temperature of 26 – 28 °C (79 – 82 °F) for about 7 days. The must is kept in contact with the skins through circulation pumping and gentle pressure from below. We thus achieve ideal results with the coloring from the skins and emphasize the fruitiness of the wine.
