Harvest Paying particular attention to achieving optimum ripeness, the grapes are harvested by hand, in boxes, in the cooler hours of the morning to preserve the varietal aromas.

Wine making Soft pressing of the whole grapes and cold pressing of the must; alcoholic fermentation takes place slowly at a temperature of around 15°C. Once fermentation is complete, the wine is racked and malolactic fermentation does not take place.
