Harvest The grapes are usually harvested in mid-October. The grapes are selected by hand three times: directly on the vine, as whole bunches on the sorting tables, and finally as individual berries after destemming.
Wine making Vinification is traditional and takes place in special vertical vats, with gentle punching-down and rinsing of the submerged cap, followed by a long period of maceration under submerged cap. Malolactic fermentation in stainless steel, the following spring.
