Charmat method brut sparkling wine, produced by Tenuta Ulisse, native Pecorino grape, 12% vol. 0.75 l bottle. A wine born from the desire to innovate and explore the potential of Abruzzo's grape varieties. An intense aroma thanks to the varietal personality of tropical fruit in the Pecorino. Lightly straw yellow. The aromatic note perceived on the nose continues and develops on the palate, spreading in breadth and depth. Rich in complexity and elegance.

| Story | Vine of uncertain origin, the Pecorino has been grown for centuries in the central regions of Italy, especially Marche and Abruzzo, where it is known also with different denominations. The bunch is medium-small, cylindrical and elongated, with small, spherical, golden yellow berries and a strong skin. |

| Wine making | The whole grapes are chilled in our exclusive cooling tunnel with an immediate drop in temperature and consequent cold maceration of the skin peels; · After destemming, cold maceration on the skins in stainless steel vats and soft crushing in an inert environment at 0.7 bar; · Cold static decantation for 24 - 48 hours. |
| Aging | The must is kept in refrigerated tanks at a temperature close to 0°C, and is placed directly in the autoclave where, after the first fermentation in steel at a controlled temperature, the sparkling takes place using the Charmat method. Subsequent ageing in the bottle for 3 months. |
