Harvest Manual harvesting in separate boxes for the individual varieties. A portion of the Croatina grapes, approx. 20%, is harvested late in order to ensure a higher sugar and aroma concentration in the bunches, which is naturally achieved on the plants in the late autumn temperatures.
Wine making Manual harvesting is followed by soft crushing and maceration in contact with the skins for a short period (5-6 days) at a controlled temperature (28-30°C) with three replacements per day, conducted with the aim of respecting the characteristics of the fruit of each variety as much as possible.
