| Wine making | The grapes, harvested in crates if necessary, are immediately chilled to a temperature of 10 °C and then sorted by hand. After being crushed and destemmed, they ferment at 23 °C in wooden vats and steel tanks; they remain on the skins for 14 days with one pumping over and two manual punch-downs a day; they are then racked off with the help of the vertical press. The wine thus obtained is aged in wooden and steel vats for 6-8 months. |
