Description

The mosaic of soils typical of the gully landscape that surrounds the hills of Palazzo di Varignana give Pinot Noir unique characteristics. The concentration of the blue clays and the aromatic expression of the yellow sands generate a complex and elegant wine capable of bringing out the full potential of this territory.

This wine pairs perfectly with lean meat dishes, pasta with white meat sauce, feathered game meats, white Romagna tartare. Its vigour and aromatic complexity also make it an ideal match for lamb or roast. Its delicate tannic texture goes perfectly with certain fish dishes such as baked salmon or tuna in a pistachio crust.

Palazzo di Varignana is a project hinged around the recovery and regeneration of historic buildings, abandoned rural lands, and farmhouses along with crops that have been discontinued.

Founded in 2015, our agricultural estate stretches today over 500 hectares of land.

Thanks to the restoration of the ancient varieties of native olive trees, extending for 200 hectares, we are proud to produce one of the most awarded and recognized extra virgin olive oil in the world.

Alongside the olive groves, there are also 50 hectares of vineyards, 3,000 square meters of vegetable gardens, a vast orchard, and an original and rare crop of saffron.
