From this winery
Nika is a farm in Pantelleria owned by Nicolò Mascheroni Stianti del Castello di Volpaia; from 1172 large Chianti Classico have been produced in Volpaia in organic farming and the wine is already mentioned among the TOP100 of Wine Spectator, Volpaia is known worldwide for the beauty of its cellars, hidden in the walls of the ancient fortified village.

After an experience in the Pol Roger cellars, founded in 1849 and an example of excellence in the production of Champagne, Nicolò, who manages Volpaia winery, together with his parents, Carlo and Giovannella, and his sister Federica, began to feed a great dream- to create a high quality Italian method sparkling wine. He visited Pantelleria some time later, an island of black rock, difficult to reach and beaten by impetuous winds, Nicolò easily allowed himself to be conquered by its passito wines and, convinced that they could also develop a great Liqueur d'Expedition with them, he created a brut sparkling classic method. Dry, elegant and complex, characterized by a great freshness, accompanied by hints of bread crust, nuts, dried fruit and rose, as well as unquestionably marked by a Liqueur de Dosage made from Zibibbo of Pantelleria.

The zibibbo grapes, grown on the island with the traditional Pantesco sapling, now a UNESCO heritage, develop a wonderful bouquet, thanks to the volcanic soils and the proximity to the sea, and a peculiar minerality, which are then concentrated thanks through slow drying in the Mediterranean sun; their encounter with the elegance of the finest Pinot Noir grapes from the Pavese hills given rise to a unique sparkling wine of its kind.

In addition to this uniqueness, Nicolò, in Pantelleria, also produces a fine Passito di Pantelleria, a great dessert wine with an amber colour and intense and prolonged aromas of dates, raisins and acacia honey.
