Wine making | Traditional method. The grapes are crushed as soon as they arrive and placed in pneumatic presses. Alcoholic fermentation takes place in temperature-controlled stainless steel vats at 18 °C. They then undergo a second fermentation in the bottle and are aged for a minimum of 12 months ("Sur Latte") before being placed in gyro-palettes and disgorged to remove the yeast deposit in the neck of the bottle. |
