Description

Paiagallo is an important Additional Geographical Mention in the commune of Barolo, with a total surface area of 12.35 hectares. On the eastern side of the commune of Barolo, this MGA is distinguished by its gentle, rounded shapes. Here, on marly sandy soils, our vineyard develops, with south-eastern exposure. The pedoclimatic characteristics found in this area lay the foundations for wines of great structure and aromatic intensity and marked elegance.

We were born and raised in the hills that are home to Barolo, the wine we love and have dedicated our lives and passions to. The history of our family is deeply linked to La Morra and to the rural roots of this part of the Langhe, which has succeeded in reinventing itself within the space of just a few decades, discovering an international vocation.

We are convinced that the work of winemakers must respond to a categorical imperative: the quest for quality. This is why we have chosen to leave the beaten track over the years and take paths that are often inaccessible, but where we see potential for growth.

We strive every day to make wines that are in step with the times while resisting the temptation to follow trends, as befits the great classics.

Wine making Maceration with the skins in temperature-controlled steel tanks for 20-25 days, starting with cold maceration (10 °C) during the first 48 hours. During this period a very soft extraction is carried out with only a couple of daily pump-overs. The wine is then drawn off and malolactic fermentation takes place in steel tanks.
Aging Afterwards, around December, the wine is put into an oak barrel, with a capacity of 30hl, where it remains to refine for a total of 24 months. After decanting in stainless steel, the wine can be bottled without filtration or clarification.
