Description
Every year the harvest tells feelings and different potential. This is further amplified in Pantelleria. Marco De Bartoli during the harvest often said that the essential element, to get his sweet wine of Pantelleria, was the "August sun," just the month in which dry the grapes in Bukkuram. "Sun of August" is the Passito sweet wine produced annually in the village of Bukkuram.

Wine making | Drying in the sun of 50% of the grapes for at least two weeks in special drying rooms, bordered by large lava stone walls. The remaining part ripens on the vine until September. After fermentation, the previously dried grapes are added and left to macerate for about three months until a balanced ratio between the alcohol component and residual sugar is achieved. |
