Description
The Cuvée Royale is produced by the Marchesi Antinori on the Montenisa estate, owned by the Count Maggi since the end of the 19th century. In 1999, the Antinori family decided to broaden their winemaking horizons by experimenting with and creating sparkling wines, and thus the encounter with the Maggi family took place in the heart of Franciacorta. In the small village of Greek origin of Calino, stands the Montenisa estate, whose historic vineyards are scattered on the nearby hill of Santo Stefano. The Antinori family, landing in the world of Lombard sparkling wines, has brought life and elegance back to a portion of land rich in history and noble tradition with the scrupulous agronomic care that distinguishes them.
A flagship among Franciacorta wines is the Cuvée Royale, which with great elegance, harmony and its floral fragrance is the expression of the territory and its winemaking tradition. Produced with a selected blend of Chardonnay, Pinot Noir and Pinot Bianco grapes grown on the land surrounding the estate and combined with careful vinification using the classic method. After harvesting and destemming and crushing, the “Fiore” must undergoes an initial fermentation in stainless steel tanks at a controlled temperature. It is completed with the typical Franciacorta fermentation, in the bottle in contact with the yeasts for the following 36 months, a time frame that goes well beyond the minimum requirements of the DOCG production regulations but is essential to obtain a quality sparkling wine.

The most important building is undoubtedly the 'Palazzetto Maggi' built in the 16th century and frescoed by the Lattanzio Gambara (1530-1574) from Brescia. This building is located in the centre of two large courtyards enclosed by porticoes.
The small church of Santo Stefano is also part of the estate. It is on the hill of the same name and overlooks the village: immersed in greenery amidst vineyards, this thousand-year-old parish church, with its Greek-cross plan, has for centuries preserved the tombs of the local noble Calini family. | Wine making | In late Winter, after the first fermentation that takes place in stainless steel tanks, the wine undergoes a second fermentation in the bottle (after a small addition of sugar and yeast) in special temperature-controlled cellar. |
