Story Chardonnay is an international grape variety that has adapted perfectly to the terroir of the Aosta Valley, acquiring a mountain character that makes it unmistakably fresh.
Origin Towns of Aymavilles and Frissonnière (Aosta).
Climate Altitude: 600-850 m a.s.l. Exposure: North-East.
Soil composition Morainic, loose, sandy on slopes.
Cultivation system Guyot.
Plants per hectare 7,500.
Yield per hectare 9,000 kg/hectare.
Harvest By hand, mid-September.
Fermentation temperature 18 °C (64 °F)
Fermentation 12 days.
Wine making Refrigeration of the grapes, whose clusters are then gently pressed. It then follows a 12-day fermentation in stainless steel at a temperature of 16°C.
