Pairings
It was much later, in 1962, that Jean Fournier settled as a winegrower in his native village. Today, his son, Laurent, is at the head of an exploitation which covers 22,5 hectares on the vineyards of the Côte de Nuits and the Côte de Beaune. Read more

Soil composition | Clay-limestone, Prémeaux limestone, and a subsoil of salmon marl and gravel from the old Ouche river bed. |
Harvest | The grapes are harvested by hand in small 15kg crates, sorted in the winery. |
Wine making | The harvest is crushed and pressed directly. The juices are lightly cold settled for 12 to 24 hours, then fermented by indigenous yeasts in barrels. |
Aging | Aged in 600-litre barrels (demi-muids, around 15% new wood) for 12 months, then 4 to 6 months in stainless steel vats. |
