| Wine making | After harvesting, the grapes are spread out to dry in the sun for about 20 days on traditional cane racks. The raisins, rich in sugars, are crushed and after a brief cold contact with the skins, the separated must undergoes a slow fermentation, at a controlled temperature, until the natural fermentation stop. |
