Description
Chateau Simon is a French sweet wine with a bright golden yellow color, highly appreciated throughout the world for its intensity, persistence, and body. With a controlled designation of origin (AOC Barsac), it originates from the Bordeaux region. Produced by the winery that has belonged to the Dufour family for three generations, it is made respecting ancient traditions combined with modern agricultural techniques that do not damage either the vine or the finished product. The wine is obtained from the expert combination of white grapes with light pulp and a special flavor: 8% Sauvignon, 90% Semillon, and 2% Muscadelle, sourced from the Barsac-Sauternes vineyards. The vines, particularly resistant to disease and other adversities, prefer clayey, calcareous soils and a rather mild climate. The harvest is carried out manually, berry by berry, in four or five batches, at the end of September. Overripe grapes affected by Botrytis Cinerea, a noble rot, are selected. They are then left to dry, allowing them to develop a high glycerine, sugar, and alcohol content, giving the wine a distinctive, rich, and rounded flavor. The grape juice is left to ferment before being carefully selected in the best tanks and blended. During these processes, 30-70% of the product is eliminated. Only the finest wine is aged in oak barrels for 12 months and then bottled. The result is a Chateau Simon that needs no grand presentation, simply to be savored.
